The study was to determine lettuce farming and selling practice in Maiduguri Monday Market. Quality of lettuces vegetables has been linked to an increasing number of outbreaks of human infections.(A.P.C) contamination, detestation of Staphylococcus aurous, Escherichia, E.coli. Microbiologicalsafe methods. Five (5) samples were taken from Maiduguri Monday Market. All the five samples were contaminated with the named microorganism. This research work is to determine the bacteriological quality assessment of lettuce vegetable sold in Maiduguri. To determine the presence of bacteria in the lettuce vegetable, isolate and identify the bacteria in the vegetable concerned.The presence of these microbes in lettuce may be linked to number of factors such as improper handling and processing, use of contaminated water during washing. This paper discusses the implication and assessment of lettuce and concludes with some recommendations should be conducted in other parts of Maiduguri using food materials, to enable a microbiological quality risks should also put forward by the government and food agency like NAFDAG and consumers should observe the hygienic rules to minimise the potential microbial hazard and food vendors are to improve the sanitary condition of the products they sell in the various markets within Maiduguri.
